Yes, the wrappers implement the new methods of 6.1 based on 6.0 API. So
it should work..I think there was one case which is not supported
though, but I cant recall the details.

I don't understand it either to be honest. I have a suspicion that that
the Felix HTTP support does a lot more than just wrap Jetty and can
maybe properly implement Servlet 6.1 on top of a Servlet 6.0 container.
in my pov this is not blocking our sling starter 14 release - we can
always make a new release when felix comes around with a new http
release featuring jetty 12.1.
