i tried with java 21 first, but something breaks with jbake using java 21.
java 17 seems to be the sweet spot currently working both with
frontend-maven-plugin 2.0.0 and the latest jbake version.
so let's stick with java 17 for now and dig deeper in the jbacke issue when we
are forced to update to java 21.
