We currently include the tika-bundle artifact in the quickstart. However, that
means we include all dependencies for all parsers, and that brings in a lot of
disk and memory footprint.
We should rather include tika-parsers and then the dependencies we use. I think
we could simply ensure we can index PDFs as we already have an IT for that and
allow the consumers that need extra dependencies to add that.
