BTW I got a response from Sam on my question on the courier-users list. It seems
the way courier is structured, the received headers are actually built up as the
message is passed through multiple programs. The part that is responsible for
writing the part 'with esmtp' can only tell that the message came from courier's
esmtpd, so making courier support RFC3848 is acutally non-trivial. I think the
only way to easily do it would be to have courier parse its own header to find
whether or not the message had AUTH and/or SSL, and that implementation seems to
be too hacky for courier.

Anyway, at least now SpamAssassin will properly trust authenticated users to my
own mailserver! Since nearly 100% of my users are remote, this is a huge 
benefit.
