More testing with ThunderBird:

 Content-Type: text anything here

is treated same as text/plain by ThunderBird, in both single and multipart 
messages.

No Content-Type header in a message is the same as text/plain in a single part
message.

 Content-Type: textrandom garbage
 Content-Type: foobarrandom garbage

that is, if it does not begin with "text " or "text/", that message or part is
not displayed by ThunderBird.

If other MUAs have similar behavior then the correct fix would be to look for
 text[ /]  instead of text/ wherever that is being tested, and if it is not
specifically text/html or whatever else is looked for, then treat it as 
text/plain.
