The USB stick might give you less i/o throughput than an internal hard disk, and it might fail early due to flash wearing out. Otherwise this sounds like a fine setup to me. In any case please do not forget to keep backups (investing in another big disk and using 'svnadmin hotcopy' to copy your repositories to it once a week or so will pay off as soon as the primary disk fails).
