Hi, I think this is excellent idea! There are also tons of tasks that one can contribute that aren't directly tied to framework development like examples library, example / best practices applications and documentation etc. to name a few that can be used to drive people in.
I think that the T5 ecosystem would benefit most of work that is not directly related to framework development, but usually these tasks are rather boring for programmers, so I don't know how interested mentees would be doing such nobody-else-want's-to-do-it tasks. Depending on the skill level of the mentee they could do some jira hunting and/or even separate library programming? (Meaning integration libraries to some technologies which could be voted upon?)
