I suspect a fair number of our users are on Java 5 still, especially in enterprise settings. POI still gets about one message a month from people running it on Java 1.4 who're frustrated that the latest versions need Java 1.5! We can ask those sort of users to upgrade, but usually it isn't their choice and they can't.
For now I'd say we should likely stick with Java 5 as the minimum version. If there's a compelling feature we need from Java 6 then revisit it, but for now I'm not sure there's anything we'd need that justifies loosing all the users stuck on Java 5.
