The Apache Software License is fairly easy to read as a non-lawyer, so
your best answer is likely to come from reading that!

As long as you're bundling the tika-app binary jar as-is, typically just
including the LICENSE and NOTICE file in appropriate places (as defined in
the license) is normally enough. (This isn't legal advice though!)
If some members of your team are interested in our software and how we use
Tika, I would be more than happy to offer them a free license and answer any
questions.
I think we're all always interested to hear about new and interesting ways
that people have found to use Tika!
