You need to use the dependencies that ship with Tika, especially for things like POI and PDFBox where Tika works closely with those projects to get fixes in and changes propogated. If you want to use POI 3.11, you need to use a version of Tika that depends on that version, which is Tika 1.7

That said, you'd be very very strongly advised to upgrade to Tika 1.8 (POI 3.12 beta 1), or even better just wait another few days and go for Tika 1.9

(If you really really had to use an older version of Tika with a newer Apache POI, you'd pretty much need to replace the org.apache.tika.parsers.microsoft package and sub-packages with the ones from a version of Tika with the dependency you want, handling any new core features they depended on)
