Summary: Try to unify unit tests around TikaTest functions

Over the years, we've had different ways of writing unit tests. It would be
helpful to unify around TIkaTest's {{getXML()}} and {{getText()}} rather than
initializing the handler, metadata and context...where possible.
We should also consider moving to a single static AutoDetectParser were
possible.
