The UI is not very familiar to me.  It looks like regular java Strings are 
being used.  The content handlers are writing to StringWriters, and then we 
call a JEditorPane.setText() on the resulting String.  My guess is that a font 
is not getting selected correctly for you at the JEditorPane level (e.g. 
outside of Tika's control?!).
