IMHO (I'm not really experienced with Docker), I believe all these different 
"launchers" should fall into the same repos 
https://github.com/apache/tika-docker, and hub.docker.com/r/apache/tika .  
Another, tough question, which I'd rather avoid is the set of Tesseract 
languages. But I hope we can install all of them, and then control via config.
