The general behavior is by design. tika-server's pipes and async endpoints, once turned on, allow configuration. tika-grpc is open by design. I'll open a separate PR where we improve the documentation. Separately, we should also add outputlimits, embedded limits and parser memory ceiling settings t\o @OperatorOnly.
