Closing, this was a debugging mistake on my side. {{application/illustrator}}
({{*.ai}}) is already a sub-type of {{application/pdf}}, with the
PostScript-based files split off as {{application/illustrator+ps}}, and a
PDF-based {{.ai}} gets its thumbnail from {{/unpack/preset/thumbnail}} like any
PDF. The missing preview I saw came from the client declaring {{.ai}} as
{{application/postscript}}, not from Tika. Sorry for the noise.
