Thinking out loud: should we even keep the 7.x Dockerfiles? Continuing
to build those causes these tags to show up here

7.x (and soon also 8.x) being EOL is exactly the opposite of what docker
considers to be supported IMO:

Looking at https://dist.apache.org/repos/dist/release/tomee/ really there are
only builds of the latest 8.x and 9.x versions left, everything else (including
current releases) seems to be on https://archive.apache.org/dist/tomee/ now.
Is this intended and the Dockerfiles need to be updated? Or perhaps some
mistake?
