Hello,
I found this interview about the upcoming MS Office 12 user
interface, which I hope is interresting for you too:
http://www.microsoft.com/presspass/features/2005/sep05/09-13OfficeUI.mspx
IMHO there are many good ideas in this user interface, but it sounds
like all other Windows Vista applications will stay with the old user
interface with menus and toolbars. Which means that OOo will still
look native on Windows Vista with classic menus and toolbars.
Some interessting details, that IMHO shoud be considered fo OOo 3.0:
-Mouse over a 'toolbar' button shows a preview at the current cursor
position
This would need to be configurable, and probably off by default, for
accessibility reasons (otherwise way too much noise emitted in the form
of attribute-change events from the text).

-The view and zoom control in the status bar looks looks better, than
the zoom feature described in the OOo Zooming specification. (I know
from watching my colleagues, which use StarOffice, that they always
change the zoom factor via the view menu, because they don't expect
any functionality in the status bar.)
-The word count in the status bar
