One small non mandatory suggestion (you have my +1 either way): I'm not sure about the statement around 3.1 being "much more impactful" since it's mostly a matter of perspective. For environments running ES7, with it getting to eol on Jan. 15th (https://www.elastic.co/support/eol), it could also be considered quite impactful.
I'm not saying that to tone down on the importance of the changes coming in 3.1, but maybe this could be phrased around 3.0 addressing technical debt and dependencies updates, and 3.1 bringing new features. Here's a suggested update: Version 3.0 of Apache Unomi has been released, addressing key technical debt by upgrading support to the latest versions of Apache Karaf and Elasticsearch v9. This update was particularly important given that Elasticsearch 7 reaches end of support in January 2026 (https://www.elastic.co/support/eol). The upcoming 3.1 release will shift focus to delivering new features and improvements, including support for OpenSearch 3, multi-tenancy, and several other enhancements. Development for 3.1 is complete, with code passing all unit and integration tests, and the changes are now being reviewed and integrated in smaller increments. The project will highlight these additions and improvements as part of its next release communication.
