I just discovered the following anomymization library :
https://github.com/arx-deidentifier/arx
It could be interesting to look at integrating it with Apache Unomi, although
we should first start by a review of the dependencies since some may not be
compatible with the Apache license.
Also maybe other alternatives exist ?
