there are two questions to your answer (at least :)

1) If by a hidden form control, you mean something like a hidden control in html forms: you don't need such a thing in the xforms world. In html, such a field is just to add a name/value pair to the data. You can just put your data in the instance, there is no need for it to be bound to a control. If you want that data to be calculated, you can define a binding that does so. (in the binding tab of the data navigator) no need to associate a control with the binding.

2) If you want a control that is visible, only when a certain condition or state in the instance occurs, than xforms:toggle is what you need. toggle isn't yet supported in OpenOffice.org though.
