Declare separate prefixes:

xmlns:office1= ...
xmlns:office2= ...

You can then have templates that match either:

<xsl:template match="office1:foo|office2:bar">
...

will it work for XPath queries ?

    <xsl:value-of select="/office:document/office:meta/dc:language"/>

I know this is not a specific OOo question so please forgive me and feel
free to redirect me

The xsl list is a great place for this.
