Hi, there is a slow paced effort in Community Development to build up the Apache projects at WIkipedia. Of course it is a lot up to the projects to fill in the content.
Wikipedia editing is quite restrictive, so before publishing it is recommended to create the pages in "user space" which will not be interfered with by WIkipedia editors. So for Apache Zest, I have started https://en.wikipedia.org/wiki/User:Niclas.hedhman/Apache_Zest and the final page is listed from https://en.wikipedia.org/wiki/List_of_Apache_Software_Foundation_projects I would appreciate a paragraph or two from everyone, to make this a reasonable entry.
