you can change the rights on the shared directory with the "file permissions" option, but users will still be able to view the root folder and all public folders. if you want to completely remove all access from unregistered users, remove all the <permission> nodes concerning the user "nobody" in the file /WEB-INF/etc/slide/data.xml . this file is read only once at jahia initialization to create the base data, so you have to do this on a fresh install, before running the wizard . this should prevent all unregistered users from accessing any file.
