Hmmm.... perhaps screenshots would be a better option than an actual demo. There won't be much time since the whole talk will be about an hour and the focus is on the educational side. And the audience probably won't be technical at all (mostly first year Pedagogy students) so probably they wouldn't notice the difference between a "real" demo and something like this.
