I don't think there is some official way yet to do this - I've asked about it on this list several times.

There is an unofficial way to do it, and that is only possible in the "rpm" images, which contain xterm as opposed to the standard ones.

If you mount the image locally, then edit /home/olpc/.xinitrc, and make the last two lines to read:

# exec /usr/bin/sugar --test-user $OLPC_USER
exec /usr/bin/xterm
