Your approach is basically what we've used to do secure (or maybe a better word 
is "safe") updates of PlanetLab nodes (www.planet-lab.org).  It doesn't protect 
against soldering irons etc., but appears effective enough to keep systems 
secure. Of course, we do not have the same storage/memory footprint problems as 
OLPC does, as the open source public crypto codebase tends to be large.  
Nonetheless, thought I'd speak up in support of your proposal.
