A couple of ways:
a) get a developer key, and reflash from OFW
b) put a signed bootfw.zip of the desired firmware on a USB key, boot
with it inserted. (I haven't tested this recently.)
c) upgrade to a build containing the newer firmware. <- In general,
this is recommended.
