Most will have a registration interval of 1 minute or 5 minutes for NAT purposes, as the system was recently upgraded from SER 0.9.6 which didn't handle NAT keep-alives very well and so necessitated a short registration time on the client side. Few (if any) users will have changed to longer intervals. I would budget on 1000 registrations per minute (this figure may be on the high side). If we can overcome this problem, we'd plan to move some very much larger systems (several hundred thousand users) over to OpenSIPS at some point in the medium future.
