If you don not do any NAT traversal on the SIP proxy, then you perfectly support ICE. Its purpose is to allow end-points to negotiate a direct media path by advertising and probing using STUN like algorithm multiple IP:port combinations where the SIP UA is or seem to be directly reachable.
