I've just thought of the following:

Wasn't it the OOM killer that was killing your OpenSER instances? 
This is a kernel thing that kills processses just before a Linux 
machine is completely out of memory. If I remember correctly you 
might be able to find something in /var/log/messages (wasn't 
debian using /var/log/syslog?)
