Yes - that is exactly how we plan to handle storing places. You'd start typing in the place name and we'd search the place web service you'd set in the config, which would by default be something like http://global.mapit.mysociety.org/ If you select a match it saves the url to the endpoint, if no match works you store a plain string that is the name of the place. No reason why this sort of functionality could not be applied to other fields as well - for the orgs as you suggest it could get the name and create a link entry to the external database.
