We show you here: http://www.e-smith.org/docs/howto/howto_modify_e-smith_interface_rpm.php3 how to make incremental changes by using patches, leaving the original tarball unchanged. We make all our minor changes this way, as do pretty much all other vendors. I also notice that you are building your RPMs as the "root" user. It's best to do as little as possible as "root".
