yeah, I encountered this yesterday, too, on a different platform.
Can you try the following

cd ~./pybombs/recipes/gr-recipes && git pull
https://github.com/marcusmueller/gr-recipes pkgconfig_cofigure

before re-trying the "pybombs prefix..." command?
