A good starting point is http://www.isc.org/products/BIND which will give you information about BIND, one of the most commonly used DNS servers.  It's freely available and can be downloaded from the links at ISC.org.  There are a number of FAQs there which may help you understand the whole system.
 
It's also highly recommended that you buy the O'Reilly book "DNS and BIND" which has a very good discussion in it of how to set up your DNS servers properly.

Public DNS is of no help for info.
