By mandate the contact information and nameservers for a transfer must
(typically) remain static until the transfer is complete. Adding this
feature would bely that mandate. Since the information in our system is not
authoritative until AFTER the transfer is complete, there's no need to be
able to change it anyway :)

Hmm... well, I think it would be good to change the data you need to.
If that helps you, how about adding "WARNING: This domain is still not
under control of OpenSRS. Changes made here will not be done until the
domain registration or transfer is complete." ?
