Sorry for the delay in this - here's the official response from Nominet:
<SNIP>
Hi
The whois shows the email address of the last person/organisation to modify
the domain. This helps when either the registrant or the ISP need to check
that the modification they sent has been actioned. The only way to change
that email address is to modify the domain in some way having sent the email
from the address that you want to be visible. The email address on the whois
cannot be manually modified.
</SNIP>
Since the address we use to send changes to Nominet is [EMAIL PROTECTED],
that is what shows up here.

Hi,
a WHOIS on our UK domain shows: "Record last updated on 16-Nov-2000 by
[EMAIL PROTECTED]" Is there any possibility of getting our mail
address in there?
Thanks,
