My advice is to create a handle for the registrant to use as registrant ID
and then one for yourself to use as admin and tech (if needed). This would
be the easiest solution. I believe that you will be able to edit contacts
down the road (this could likely not happen til November/December) but it is
in the cards at sometime.

Does that mean we can register a sunrise claim on behalf of our
client, using ourselves in all 3 contacts, and our client's
trademark info in those fields, and still get the domain ok?
It seems odd because it may mean I can get any old body's trademark
info, i.e. look it up on TESS, enter myself as all 3 contacts,
and get the domain name for myself.
But if this means we can do this on the premise that we will let our
clients edit the contacts afterwards this would be ok I guess.
Or should we just take the trouble to create the contacts right away?
