If I remember correctly from having to deal with a customer's .org domain, your last statement is the answer. The .org registry requires 2 name servers. If you provide only one name server, you will end up with strange results. P.S. It's not UltraDNS you are dealing with. PIR is the registry operator for .org so you should ask PIR why they are not making the change. Also, PIR updates in real-time.
