Kevin Gorman (current Wikimedia Communications intern), and Katie Gilmore. We're all going to the Wikipedia in Higher Education summit in a few weeks and should be meeting before, so I'll definitely ask them what they think. The thing is, it seems you really have to plan around doing the p2pU course to coincide with a decal or whatever discussion your campus may permit. The sessions are totally different. I was thinking maybe you could pitch doing the p2pU course as a participant and get like 1 unit of credit for completing it with some other students. This would be a really awesome experience and do-able at any school--even if you aren't lucky enough to have a totally built-out, funded infrastructure like DeCal.
