Hi Neal, The ability of large institutions to maintain a website with stable links over time is fairly limited, so github seems like a good place! At Monash Data Fluency, we maintain links to our workshop material from our university website: https://www.monash.edu/data-fluency/workshops . My bet is that this page will not last nearly as long as the github pages sites themselves.
My field (bioinformatics) has organizations that maintain databases of training material (GOBLET, ELIXIR TeSS).
