We were using a single field but had problems when customers weren't receiving their order confirmations, which meant we had to call them. For me, the goal was to have customers think about their email, not just to enter it twice. So we added a notice that appears when the focus leaves the field:
"Your confirmation will be sent to [email protected]." The change hasn't been out that long, but the anecdotal evidence is that the problem has been reduced by a third or so. The solution is JavaScript dependent, but for our audience that is okay.
