Some people distinguish between backups (config settings) and content sync (probably what you really are asking about). http://support.apple.com/kb/HT4946 At an Enterprise level, security, app deployment, rogue app detection, backups, etc, fall into the realm of a Mobile Device Manager, aka an MDM. Apple has some white papers on it, but I don't have the URL handy. Two names to especially look at are the Good and Mobile Iron MDMs. PCMall has MDM expertise with medium sized businesses, the pcmg.com side of their business actually works with edu customers as well. Apple has a basic MDM that can backup to iCloud (no first hand use here, though).
