We're expecting to release Plumi 3 this week which is running on Plone 3 and features a transcoding daemon. As part of this release we've set up a manual for Plumi on FlossManuals. The current installation section is being overhauled at the moment and should be updated shortly. Given Macs are BSD based, this may be of assistance to you in getting Plumi 3 running on your Mac.
