I have a (python) script that does the following:
system('flac', config.flac_quality,
'-o', flac,
'--tag=TITLE=' + title,
'--tag=ALBUM=' + album,
'--tag=ARTIST=' + artist,
'--tag=TRACKNUMBER=' + track,
'--tag=DATE=' + year,
wav)
