I have a proof of concept thing I built in Flash that parses iTunes's XML. What do you need to extract exactly? I'm pretty sure it'd be easy to adapt this thing I have to output a string (in any form you want) to your clipboard so that you can paste it into another tool or text file. Or, do you just want to view the data with something other than iTunes?
