Really? Which version of metaflac are you using? I've got 1.1.2 on
Debian Sid, and it definitely has a --set-tag option:
$ metaflac --help | grep 'set-tag'
--set-tag=FIELD Add a tag. The FIELD must comply with the Vorbis
