What I'm looking for is: what does this setting specifically change in
the behaviour of the slimserver (not the theory behind having it run
as a different user).

(when I set it to something else than "root", it still tries to create
files in root's home directory and log file still gets created as user
"root", shouldn't it be doing these things for user "x" as specified
in command-line invocation of slimserver.pl??).

AFAIK this is being looked at. I noticed the problem when some of the created files are owned by root. Basically the privileges are dropped too late in startup.
