It is really up to you.
I do it 100% reversed from you.
genre/artist/album/
with each track separate in the directory with names like
08 - Chestnut Mare

Just a note, the tagging, which are fields like artist, song title,
label, genre, etc. are completely separate from the physical
layout of the wav/flac/mp3 files on your disks.
There is no requirement that the physical disk layout
have anything to do with the metadata tags
