What does the logfile say (/tmp/slimserver.log by default)? Are you using MySQL as database?

Thought so ;-). There's a known problem with slimserver losing its connection to MySQL. The but 947 contains an "experimental fix" for this. You could give it a try (http://bugs.slimdevices.com/show_bug.cgi?id=947)
MySQL isn't officially supported, though.
