I think that New Music simply displays all your music in the order that it was added, with most recent first. Therefore, it would play everything. You're right, this isn't really intuitive in this case! Problem is, how do you define new music? There would have to be a pref where you can specify for how many days music should be considered new. Maybe there already is, but I don't recall seeing it.
